1. Preheat oven to 220°C.
2. Lay the pastry oval (me: square) onto a baking sheet.
3. Arrange the apples in overlapping slices down the centre and brush the pastry borders with egg glaze.
4. Bake for 12-15 minutes until the pastry has risen around the apple and is golden.
5. Remove from oven and glaze with melted apricot jam (me: with butter).
6. Serve warm, lightly dusted with icing sugar if desired.
